Post Tourney Lunch... 06/01/2009
Friday evening to Sunday afternoon we were camped out at the local baseball fields for the End of the Season Tournament. While DS#2 played his heart out (a few home runs & almost a grand slam - dad held him @ 3rd) I learned how to keep official score (coloring in various small boxes & writing baseball lingo codes). DS#1 did his part by hanging out, cheering little bro on & working his part time job. So, now that it's Monday & the house is quiet again, I'm faced with the loads of laundry that went undone as well as all the other weekly things that were overlooked in our absence. My thoughts? That's what you're here for right? :o) Oh, well. We'll get to it through out the week. One nice bonus is, since I make an amazing effort to pack a healthy cooler that the players can tie into between games, I had plenty of non-guilty snack food laying around! And thanks to last week's Oprah, where Dr. Oz pushed the "fiber" message, I was inspired to see what I could concoct! The results are: Post Tourney Salad From the bottom of your cooler to the bottom of your belly! Begin with the lettuce bed of your choice (mine was prepackaged baby spinach & baby romaines) Add all things pre-cut & perishable to the top And anything else you can dig up from the back of the fridge Now while this may sound absolutely disgusting let me give you the toppings list I used: Sharp Cheddar (cubed) Fuji Apple slices (I cut down to a cubed size) Baby Carrots (sliced) Garbanzo Beans Black Beans Vine Tomato & quartered oranges for dessert. Honestly, on my telecommuting days, I usually settle for Top Ramen or Mac & Cheese!
